This is Why.

I've noticed that a couple other people have recipe blogs, and I decided why not. This way I NEVER lose a recipe, and if someone wants a recipe from me they can just come here and find it. It might be easier than calling and asking me to repeat it back to them. Brenden says nobody wants my recipes, and that's okay, this is just so I never lose them :o) Sorry if some of these don't make sense to you.

Lemon-Garlic Chicken

1/4 c. fresh lemon juice
2 Tb. molasses
2 Tsp. Worcestershire sauce
4 garlic cloves, chopped
2 lb. boneless, skinless chicken thighs
1/4 tsp. salt
1/4 tsp. black pepper
lemon wedges
parsley springs

Serves 3

1. Combine first 4 ingredients in a nonreactive dish and add chicken. cover and marinate in refrigerator 1 hour, turning occasionally.
2. Preheat oven to 425 degrees.
3. Remove chicken from dish, reserving marinade, and arrange in a shallow roasting pan coated with cooking spray. Pour reserve marinade over chicken; sprinkle with salt and pepper.
4. Bake at 425 degrees for 20 minutes, basting occasionally with marinade. Bake without basting for 20 minutes more or until chicken is done. Serve with lemon wedges and garnish with parsley, if desired.
